Proxy is juices, vinegars, spices, herbs, bitters, tea & other botanicals married into a potion fit for our clever senses. Made in collaboration with Sommelier Miguel de Leon, an alum of Momofuku and Chez Panisse, and sommelier at Pinch Chinese – he has earned numerous honours, including Michelin Guide Sommelier of the Year & a James Beard Award. ‘Vinta’ is orange in colour, texture & style, draws inspiration from skin contact white wines, and is an homage to Miguel’s Filipino childhood. Riesling juice acidity, holy basil, pandan, jasmine vines, peaches in pineapple juice & shaved fennel freshness. Pour alongside Filipino BBQ & watching Street Food on Netflix.
