‘Midnite Négoce Cabernet Franc Rosé'

A vibrant, juicy and unique Ontario rosé for locavores. Last House is a small batch winery situated on the beautiful limestone shores of Lake Ontario. This is the second negoce, or purchased-fruit, cuvée from winemaker Andre Gagne, the cab franc was sourced from Kevin Watson in Niagara’s Four Mile Creek. A striking hibiscus hue is achieved by leaving the grapes on skins for 12 hours before pressing off and fermenting with the addition of a pied de cuve made from estate chardonnay – think the winemaking equivalent of a sourdough starter being added to flour – in primarily stainless steel tanks (90%) and neutral oak (10%) for a suggestion of roundness.
