The antithesis of a set-in-their-ways Burgundy, this new-to-Ontario pinot is supple, lively and elegant without being expected. Winemakers Naïma and David Didon reign over a biodynamically tended, two-hectare estate in Chassey-le-Camp, a quaint pocket renowned as Burgundy's exclusive aligoté appellation. FUN FACT! They have worked closely with the legendary Julien Altaber and Dominique Derain to make sure their land is a conducive environment for the zero-zero winemaking philosophy. The generous pinot grapes come from Meursault, and are aged in barrels for seven months cradling themselves through the metamorphosing slumber. A lovingly molded structure, black cherry juice, grandma’s leather gloves, stemy crunch, dampened wood & sour green strawberry . Enjoy with raclette loving draped over anything and everything.
