Arbois Vin Jaune En Spois’
Savagnin, Jura, France
A world in a grain of sand…or a drop of vin jaune? The world famous wines of Bénédicte and Stéphane Tissot are prized, punctuated & polished. Working with as minimal cellar intervention as possible and great biodynamic care in the vineyard, they represent some of the best the Jura has to offer. One of the Jura's most fabled, intensive and emblematic wines, vin jaune should be considered one of the seven drinkable wonders of the world. From vintage 2015, aged under “veil” (a thin layer of yeast that forms at the surface of the wine) until dry, then moved to old oak for the mandatory six years (!) ageing before bottling. Maple roasted hazelnuts, pear skin, toffee pecan pie, deep cellar breath in, mycelium network, saline pulse, sawdust pile, swarming minerality, allium spice, gingerbread spice & honey washed cheese. Enjoy in small quantities or large (badass) maybe with lobster, this ultra rare golden juice is from a kingdom beyond rule.
