Proxy is juices, vinegars, spices, herbs, bitters, tea & other botanicals married into a potion fit for our clever senses. The end product is intricate, gradated beverages in the image of wine without cosplaying wine. Wormwood, kiwi, fig leaves, saltwater lakeside herbs, & minty French lavender, with a sumptuous weight from the invigorating verjus. Pairs well with caviar on oysters & Patsy Cline.
